Using Caffe Assist®
From choosing the right milk and jug to starting the cycle and letting Caffe Assist do the rest, here’s the simple everyday workflow for consistent textured milk.
WHAT DOES CAFFE ASSIST DO?
Caffe Assist is designed to make milk preparation faster, easier and more consistent.
Instead of manually steaming every jug, you choose the jug size, milk and recipe you want, then start the cycle.
Caffe Assist takes care of the steaming process so the barista can focus on espresso, pouring and service.
For a quick everyday workflow, you can also simply use Touch to Operate without selecting a recipe. This produces a standard latte-style milk texture.
1. SELECT YOUR JUG SIZE
Start by selecting the jug you’re using.
Caffe Assist supports four jug sizes:
- 0.4L
- 0.6L
- 1.0L
- 1.5L
Choose the jug size that matches the jug you’ve placed on the machine.
Using the correct selection helps Caffe Assist work with the amount of milk you’re preparing.
For smaller drinks or orders, use a smaller jug. For larger orders or multiple coffees, move up to one of the larger sizes.
2. SELECT YOUR MILK
Next, choose the milk you’re using.
Caffe Assist can be configured for different milk types, including:
- Full-cream
- Skinny
- Oat
- Almond
- Soy
- Other configured milk options
Different milks behave differently when they’re heated and textured, so selecting the right milk profile helps produce a more consistent result.
3. SELECT YOUR RECIPE
Once you’ve selected the milk, choose the style of milk you want.
Recipes can include:
- Latte
- Flat white
- Cappuccino
- Warm
- Hot
The latte, flat white and cappuccino settings give you different levels of foam depending on the drink you’re making.
The warm and hot settings give you another way to control the finished milk temperature.
DON’T WANT TO SELECT A RECIPE?
You don’t have to.
If nothing is selected, simply use Touch to Operate.
Caffe Assist will produce a standard latte-style textured milk, making this the quickest option for normal service.
If nothing is selected, simply use Touch to Operate for standard latte-style steamed milk.
4. ADD YOUR MILK
Add the required amount of cold milk to the jug.
Use the correct jug for the amount you need rather than unnecessarily filling a larger jug.
Starting with cold milk gives Caffe Assist a consistent starting point and leaves enough room in the jug for the milk to texture as it heats.
5. TOUCH TO OPERATE
Once your jug size, milk and recipe are selected, place the jug correctly and press Touch to Operate.
Caffe Assist will begin the steaming cycle automatically.
There’s no need to manually move the jug or control the steam wand during the cycle.
That’s where Caffe Assist becomes especially useful during busy service — the barista can move on to the next part of the order while the milk is being prepared.
LET THE CYCLE FINISH
Once Caffe Assist has started, let it complete the full steaming process.
Don’t remove the jug early.
When the milk reaches the required finish, Caffe Assist completes the cycle and moves into its automatic purge.
Let the full cycle finish before removing the jug. Caffe Assist will automatically purge after steaming.
6. WAIT FOR AUTO PURGE
After steaming, Caffe Assist automatically purges the steam wand.
Wait until the purge has finished before removing the jug and moving on to the next cycle.
The workflow is simple:
Select. Start. Wait. Pour.
Then you’re ready to prepare the next jug.

LATTE VS FLAT WHITE VS CAPPUCCINO
The recipe selection lets you change the amount of texture depending on the drink you’re making.
FLAT WHITE
Choose this when you want a smoother milk texture with less foam.
LATTE
A balanced everyday texture with more body than a flat white.
This is also the standard style produced when you simply use Touch to Operate without choosing a recipe.
CAPPUCCINO
Choose this when you want a higher level of foam and a more aerated milk texture.
The idea is not to make the barista manually reproduce each milk style every time.
You select the drink you’re making and let Caffe Assist repeat the process consistently.
WARM VS HOT
Caffe Assist can also provide different temperature options.
Use Warm when you want a lower finished milk temperature.
Use Hot when the drink calls for a hotter result.
That gives you another way to adapt the milk to the drink or customer preference without manually controlling the steaming process.
SWITCHING BETWEEN MILKS
If you’re moving between full-cream, skinny, oat, almond, soy or another configured milk, select the correct milk before starting the next cycle.
Then choose the recipe you want and continue as normal.
The process stays the same:
- Select jug size
- Select milk
- Select recipe if required
- Touch to operate
- Wait for the cycle and automatic purge
That consistency is one of the biggest advantages of the system.
COMMON MISTAKES TO AVOID
- Selecting the wrong jug size
- Choosing the wrong milk profile
- Using the wrong recipe for the drink
- Overfilling the jug
- Removing the jug before the cycle finishes
- Interrupting the automatic purge
- Forgetting that Touch to Operate already provides standard latte-style milk
